Planning and preparing weekday breakfast for our family is brutal, and one meal I wish that my kids could tackle themselves. Given that I still feel like my two small children lack the knowledge of how to master a pan over an open flame, I concede and wake up early to make sure my kids are well-fed and out the door on time.
My biggest challenge for weekday breakfast is to get them some nutritional value, including protein, while not spending a ton of prep time in the kitchen.
Can anyone out there agree that cereal can be so much easier than eggs?!
However I have found that if I take just a few extra minutes to really wrap my mind around breakfast during the week, it really isn’t that hard to get them to eat decent food.
Not all mornings are created equal, and there are some that just don’t make it past the cereal box, but when they do, here are some of my favorite go-to meals for those jam-packed weekday mornings.
Weekday Breakfast Ideas:
Egg in a Basket – my son’s very favorite breakfast. It’s become the meal of choice every single day. This recipe boasts it takes four minutes. I’ve never timed it, but I’d say that’s about as much time as I want to spend on breakfast during the week!
Egg muffins – These take a bit more prep, but have the kids help! Add any items they might like into these little golden nuggets of goodness. Mine like bacon and cheese.
Hash browns, eggs, fruit – Trader Joe’s has some frozen hash brown cakes that are easy to heat. Scrambled eggs. Banana. Done.
Egg sandwiches – Bacon or Canadian bacon, cheese, scrambled egg, bread. Easy and filling.
Pancakes – My kids love them, but I want them to pack a little protein too. Instead of butter, I spread nut butter on top (my kids like sunflower seed butter too) with just a drizzle of syrup.
Smoothies – One out of my two kids loves smoothies. Our favorite is 1 frozen banana, handful of spinach, almond milk, 1 tbsp. of almond butter, and Orgain chocolate protein, blended.
Cheerios – This is my last ditch effort to get some protein in them if it’s a crazy busy morning where I don’t have time to fix eggs, smoothies or my hair. I will put 1 tbsp of peanut butter in with the cereal and the kids lap it up!
